We've taken to playing a lot of HeroQuest on nights when our friends get together but are too lazy/tired/drunk to play D&D. It's a solid dungeon crawl board game that's simple enough for most anyone to play while having some decent depth. Only downside is that it's old and hard to find now.
We also play a lot of We Didn't Playtest This At All and the expansions as quick card games that are easy and hilarious. Think Fluxx meets Cards Against Humanity.

I've been playing Risk Legacy at work. Its quite interesting because you actually permanently change the board after each game. However, Risk as a strategy game has many flaws. I much prefer Eurogames like Settlers of Catan.

Jcrodd, great choices on games there. The LotR LCG continues to fascinate me because it plays so differently than any other constructed game that I've played. Being completely co-op is awesome, and the capability to play solo is cool. Sure, the temptation to cheat is huge when you do that, but I sure can't think of any other constructed card games where I can sit down and play even when I can't find anyone else free to play with.
Netrunner is a great game as well. Again, it just plays so differently than anything else I've tried. The Corp/Runner sides have radically different feels.

Munchkin is a hilarious card game (it's a Steve Jackson game - remember the role-playing books back in the 80's/90's?), I suppose you could call it a tongue-in-cheek version of MTG but without the need to collect expensive cards. There are many different expansion packs that add twists to the game and they can be all mixed together to make some utterly bonkers games! Check it out!

Highly recommend Munchkin, like budski said. It's hilarious and there's a setting for every taste. Classical D&D, Sci-Fi, Hong Kong Martial Arts Movies, Cthulhu Mythos, pick your poison.
