Alright, let's roll this down slowly...
Pack 1: Dagnabbit! I'm gonna end up in Red again! But I really can't pass on Arc Lightning. I mean, the card's a staple even in fully powered Cubes.
Pack 2: Gravedigger would be the obvious choice for me since I often draft B/R in Cubes, but I also like Simian Grunts a lot. Sure it has Echo, but the body is huge for its cost. This thing on turn 2 with a mana dork is backbreaking, and it also works as removal thanks to Flash. It's very good. So, yeah... unleash the monkeys.
Pack 3: Rendclaw Trow is probably the correct choice here, but I really like Sentinel Spider. It resist a good chunk of whatever removal is available in Pauper Cubes and between Reach, Vigilance and a 4/4 body, it can lock up a board all by itself. I'd go with the Spider.

I know that our 2nd and 3rd picks were the same, but where you said Arc Lightning is a first pick "staple" I counter with Crypt Rats as a first pick staple. The only thing is it's pretty much FORCING you into a heavy black draft. At least in this instance (if you look at the cards I was able to pick up) this was a correct choice for me.

Yeah. I think that many players lean too much on "the correct pick according to them" and not enough on "the correct pick according to me". While probably not as important as skill and experience, playstyle and personal preferences are relevant too and should be taken into consideration when drafting.
Myself for example, will often lean towards aggressive strategies when it comes to Cube. A card like Arc Lightning better fits in the type of deck I like to build and, more importantly, in the type of deck I'm most comfortable with. Crypt Rats is a great card, my second pick in the first pack, and quite possibly a stronger card than Arc Lightning in Pauper Cubes. But I know, because of my preferences, that I will not do as well with it than I will with Arc Lightning.
